Ceasar salad
Ceasar salad for dinner
ingredients
- 1 head of romaine lettuce
- 6 tablespoons olive oil or 3 tablespoons olive oil and 3 tablespoons reduced fat mayonaise,
- 3 tablespoons balsamic vinegar,
- 1 tablespoon anchovy paste,
- 1 clove of garlic minced,
- 1 teaspoon dijon mustard
- 1 egg,
- 2 tablespoons worchestershire sauce,
- 1 tablespoon dried parsley
- salt and pepper to taste
- 1/4 croutons
- 1/4 cup grated cheese
- grilled chicken, or salmon optional

Wash romaine and break up and place in large salad bowl Add croutons, and cheese. Set aside.

Dressing:

In small bowl add olive oil, vinigar, anchovy paste, garlic, dijon mustard, egg, worchesthire sauce, parsley, salt and pepper, and stir well to blend

Refrigerate for 15 minutes.

Sauté a medium size chicken breast or salmon over medium heat in pan and add bar-b-que sauce or favorite marinade. Cook through . Remove from pan and cut into bite size pieces. Add to salad bowl. Pour dressing over salad, and serve immediately.
