Mediterranean Whole Wheat Wrap
As far as wraps go... this one is out of this world. So much flavor and nutrition all in one shell. These make great appetizers cut into smaller pieces.
ingredients
- 4 large whole wheat burrito shells
- 2 boneless, skinless chicken breasts
- 4 tablespoons olive oil
- 1 teaspoon Greek seasoning
- Salt and pepper to taste
- 2 cups romaine lettuce, chopped
- 1/2 cup diced Roma tomatoes
- 1/2 cup black olives, sliced
- 1 red pepper, cut in strips
- 4 green onions, sliced
- 1/2 cup golden raisins
- 1/2 cup feta or fontina cheese, shredded
- Creamy Italian dressing or your choice dressing
- 1/2 cup cilantro, chopped

Heat large skillet. Add olive oil and get it hot.

Cut chicken into strips. Season with salt, pepper and Greek seasoning.

Saute’ chicken in hot oil until done in middle but do not over cook as this will dry out the chicken. Set chicken aside.

Next, lay out a burrito shell. Add some lettuce. Now lay a few strips of chicken on lettuce. Next add some Roma tomatoes and black olives. Add a couple of strips of red pepper. Top with green onions, golden raisins and cheese. Sprinkle with cilantro and add Creamy Italian dressing. Roll up burrito shell making sure to tuck in edges. Cut into two or three sections. Wrap in wax paper or foil if desired.

You can always change up the ingredients in this wrap but I personally think that this wrap is tasty and has it going on! Try adding tuna and white beans, corn or flank steak... it will always be a hit! Don't sell the raisins short... they work!
