Sara Kate's Chicken Mar Bella
ingredients
- 8-9 plum boneless chicken breasts (cut into chunks)
- 1 tsp minced garlic
- 1/8 c dried oregano
- Coarse kosher salt to taste
- Ground pepper to taste
- 1/2 c red wine vinegar
- 1/2 c olive oil
- 1 c pitted prunes (dried semisweet)
- 1/2 c spanish green olives (no pimento)
- 1/2 c capers (w/a bit of juice)
- 6 bay leaves
- 1 c brown sugar
- 1 c white wine
- 1/4 c flat italian parsley
directions
In large bowl, combine chicken, garlic, oregano, salt and pepper, vinegar, olive oil, prunes, olives, capers and juice, and bay leaves. Cover and let marinate in fridge overnight. Arrange chicken in single layer and spoon marinade over it evenly in Pyrex (may need two pyrex). Preheat oven to 350. Sprinkle brown sugar evenly over top. Add white wine around chicken pieces. Bake at 350 for 1 hour covered and baste a few times. Serve over yellow saffron rice with lots of juice and sprinkle with parsley or cilantro. Pass remaining juice in gravy boat.
