Italian Sausage Black Bean Soup
Go ahead and double this recipe, as you will find there will be no leftovers with only one batch.
ingredients
- 6 oz Italian-flavored turkey sausage
- 3/4 cup chopped onion
- 1 cup chopped carrot
- 1/3 cup chopped celery
- 2 cloves garlic, minced
- 3 15 oz cans black beans, rinsed and drained
- 2 10 oz cans chicken broth
- 1 14 oz can diced tomatoes, drained
- 1/3 cup freshly chopped cilantro
- 2 tablespoons tomato paste
- 1 tablespoon fresh lime juice
- 1 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/8 teaspoon ground red pepper
- 1/4 cup sour cream

Crumble sausage in Dutch oven, and add onion, carrot, celery and garlic. Cook over medium-high heat 5 minutes or until sausage is browned and vegetables are tender, stirring frequently. Add 2 cans black beans, chicken broth and next 7 ingredients.

Place remaining can black beans in a bowl and mash, then add to soup mixture. Bring to boil, reduce heat and simmer uncovered for 30 minutes or until soup has thickened.

Top with sour cream.

This soup freezes very well.
