Spanikopita Shells
An elegant, easy-to-eat, appetizer that goes fast! Given to me by my Greek friend, Stephanie.
ingredients
- 2-3 packages Athena Frozen Pastry Shells
- 1/2-1 onion, finely diced
- 1/4 cup minced, fresh parsley
- 1/4 cup minced, fresh dill
- salt and pepper
- 2 10-ounce packages frozen, chopped spinach
- 1 tsp cream of wheat
- 5 eggs, beaten
- 1 cup cottage cheese
- 1.5 cups feta

Thaw spinach and drain well by pressing against the sides of a colander. Reserve 1/4 cup of liquid, if possible. (If not you can substitute water or vegetable broth)

Saute onion and fresh herbs. Season with salt and pepper.

Add spinach and reserved liquid to onions. Stir. Add cream of wheat to spinach mixture. Stir.

Combine eggs, cottage cheese and feta. Add to spinach mixture.

Fill shells and top with finely minced scallions, if desired.

Bake 325 degrees F for 40 minutes.
