Grandma's Rice Pudding
ingredients
- 1/3 cup rice (not fast cooking)
- 2/3 cup water
- 1/2 t salt
- cooking oil
- 2 cups 1/2 & 1/2
- 3 eggs
- 1/3 cup sugar
- vanilla
- nutmeg or cinnamon sugar

In a saucepan, place rice, water 1/4 t salt and a drop of cooking oil. Bring to a boil, then lower heat as far down as possible. Cover and 15 minutes exactly.

While rice cooks, pour 1/2 & 1/2 in a pan and scald.

In 1 1/2 quart casserole, stir eggs until blended. Stir in sugar, 1/4 t salt, and a couple drops of vanilla.

Stir egg mixture as you add hot 1/2 & 1/2 - continue stirring and add hot rice. Set casserole in a pan of warm water (about 1“) and place in a 325° oven. Bake for 15 minutes. With large spoon, lift rice up from the bottom. Sprinkle top with nutmeg or cinnamon sugar, and bake 15 more minutes until it is set. A knife placed into casserole 1” from edge should come out clean. Center continues to cook after it is removed from oven.
