One Pot Tex-Mex Macaroni & Cheese
ingredients
- 12 oz rotini pasta
- 1 large zucchini, quartered crosswise, cut into 1/4" sticks
- 1 lb Velveeta, cut into chunks
- 1/2 c 1% milk
- 1 can kidney beans, rinsed & drained
- 1 1/2 c thin strips ham
- 1/2 c bottled chunky salsa

Cook pasta, adding zucchini 2 minutes before pasta is done. Drain & leave in colander.

Put cheese & milk in pasta pot & stir over medium-low heat until smooth.

Stir in remaining ingredients until heated through; remove from heat.

Return pasta & zucchini to pot & toss to mix & coat.
