Marinated Peppers
A delicious Mediterranean appetizer. Serve with a good crusty bread
ingredients
- 6 large bell peppers (different colors look nice)
- 1/4 cup olive oil
- 2 Tbsp. chopped fresh parsley
- 2 Tbsp. lemon juice
- 2 Tbsp. lime juice
- 1/2 tsp. salt
- 1 tsp. chopped oregano
- 1 tsp. chopped basil
- 1 cup pitted Greek olives
- 4 oz. feta cheese, cubed
directions
Broil peppers, turning occasionally until skin is blistered and evenly browned. Place peppers in a plastic bag. Close tightly and let stand 20 minutes. Remove skin, stems and seeds. Cut peppers into 1/4 inch strips and place in a glass or plastic bowl. Combine next 7 ingredients and shake well to combine. Pour over peppers. Toss olives and feta with peppers. Cover and refrigerate at least 4 hours.
