Chicken Soup
This is great to serve with chicken salad and crusty bread.
ingredients
- 1 whole cut-up chicken plus extra bone-in breasts
- 1 large Knorr bouillon cube
- carrots
- celery
- onions
- parsley
- salt
- pepper
- rice
directions

Wash chicken and place in large pot.

Cover with water.

Cut up carrots, celery, onions and parsley and add to pot.

Bring to a boil, then turn down heat to a simmer.

Simmer for 1 hour.

Add bouillon cube and simmer again for about 2 hours.

Add salt and pepper while simmering.

I usually use seasoned salt.

After simmering, remove chicken and place in a bowl.

Remove vegetables and discard.

Pour liquid through a large strainer into another large pot.

Place pot on stove and add chicken in bite-sized pieces, either cut-up or pulled apart.

Add 1 cup of white rice and bring to a boil.

Turn heat down to low and simmer until ready to eat.

This one was hard to write down.Hopefully I remembered everything. You could always smell this from outside the front door when you came home from school.
