Olive Garden Zuppa Toscana
This is one classic you do not want to miss. You may wish to add a half teaspoon of fennel seed to this.
ingredients
- 1 1/2 C. spicy sausage links -- 4
- 4 medium potatoes, cut in half lengthwise, and then cut into 1/4" slices
- 3/4 C. onions, diced
- 1/2 pkg slices bacon
- 1 1/2 tsp. minced garlic
- 1 C. kale leaves, but in half, then sliced
- 2 T. chicken base
- 1 qt. water
- 1/2 C. heavy whipping cream

Preheat oven to 300 degrees. Place sausage links onto a sheet pan and bake for 25 minutes, or until done; cut in half length-wise, then cut at an angle into 1/2 inch slices. (I like to remover the sausage from the casing and fry it in a frying pan). I drain the oil then add the sausage to the soup.

Place onions in a large saucepan and cook over medium heat until onions are almost clear. (I like to add a 1/2 cup of white wine for flavor when cooking onions) Add garlic to the onions and cook an additional 1-minute. Cook bacon and crumble. Add chicken base, water, potatoes, sausage and bacon simmer till potatoes are cooked. Add chopped kale and cream. Simmer 4 minutes and serve.
