citrus vinaigrette
this is so easy to make, and is so fresh tasting!
ingredients
- 1/4 cup vinegar (i prefer white or red wine)
- 1/2 cup olive oil
- citrus - approx. 1/8 cup juice
- 1 Tbsp. honey
- 1 clove garlic
- handful fresh herbs
- salt & pepper
- you can use any combination of herbs and citrus (this is a great way to use it up before it spoils). Some great combinations are lime juice and dill or cilantro, grapefruit juice and basil, lemon and thyme or blood orange and rosemary.

in a blender or food processor, combine vinegar with citrus juice, honey, garlic and fresh herbs. blend until combined.

slowly add olive oil and blend.

add salt and pepper to taste.
notes
this is great as a salad dressing, but can also be used to top or marinade seafood, steaks, chicken, kebabs, and grilled veggies!
