Rice, Black Bean & Feta Salad - Alex
If you are not a fan of feta, feel free to substitute a different cheese.
- 1 15oz can black beans, rinsed and drained
- 1 1/2 cup chopped tomatoes
- 1 1/2 cup cooked rice
- 1 4oz package Feta cheese
- 1/2 cup chopped celery
- 1/2 cup green onions
- 1/2 cup Italian dressing
- 2 tablespoons chopped fresh cilantro or parsley.
This goes along great with the marinated pork tenderloin.
