Salmon Patties
ingredients
- 1 can (14 3/4 oz) canned salmon
- 2 c. soft bread crumbs
- 1/3 c. finely minced onions
- 1/4 c. milk
- 2 eggs
- 2 T. minced parsley
- 1 T. lemon juice
- 1/4 tsp. salt
- 1/4 tsp. dill weed (optional)
- dash of ground pepper
directions
Drain salmon, reserving 2 T. liquid; and flake. Combine all ingredients including the 2 T. of liquid. Shape into 8 1-inch thick patties. Pan-fry on both sides in 2 T. oil, until golden brown.

Suggestion: Serve with fresh green salad.
