Mango Bruschetta
ingredients
- 3 garlic cloves
- 1/4 cup extra virgin olive oil
- 10 ripe roma tomatoes, diced and seeds removed
- 2 ripe mangos, peeled and diced
- 1/2 cup chopped fresh basil
- 1 lemon or lime, sqeezed
- salt and pepper to taste
- 1 french baguette

Mix garlic and olive oil, add tomatoes and mangos. Add basil and mix well. Add lemon/lime, salt and pepper, stirring to combine. Place in large glass bowl and chill at least 4 hours, or overnight.

Cut bread into 1/4 inch pieces, brush with olive oil and toast until brown. Smother with topping and enjoy!
