Use your choice of seafood, chicken, sausage.

ingredients

  • Saute large onion and green pepper. In 6 quart plus pot pour:
  • Chicken stock
  • 1 can (1 lb) mashed tomatoes
  • 1 1/2 lbs cut okra, or sliced frozen
  • 1 lb smoked sausage, sliced
  • Chicken pieces
  • Salt & Pepper
  • Tobasco or Rotel
  • Garlic
  • 1/2 t thyme
  • 1/2 t rosemary
  • Bay leaf
  • Worcestershire

    Add water to make 6 quarts.

    Simmer 1 hour

  • 3

    Add 1 lb cut up shrimp, fresh or frozen, can flaked crab, 1T gumbo file.

    Heat to boiling.

    Serve over rice. May be frozen, but there probably won’t be any leftovers.
