Seafood Gumbo
Use your choice of seafood, chicken, sausage.
ingredients
- Saute large onion and green pepper. In 6 quart plus pot pour:
- Chicken stock
- 1 can (1 lb) mashed tomatoes
- 1 1/2 lbs cut okra, or sliced frozen
- 1 lb smoked sausage, sliced
- Chicken pieces
- Salt & Pepper
- Tobasco or Rotel
- Garlic
- 1/2 t thyme
- 1/2 t rosemary
- Bay leaf
- Worcestershire

Add water to make 6 quarts.

Simmer 1 hour

Add 1 lb cut up shrimp, fresh or frozen, can flaked crab, 1T gumbo file.

Heat to boiling.

Serve over rice. May be frozen, but there probably won’t be any leftovers.
