Calico Corn Salsa
ingredients
- 1 1/2 cups frozen corn, thawed
- 1 cup frozen peas, thawed
- 1/2 teaspoon ground cumin
- 1/8 teaspoon dried oregano
- 1 Tablespoon olive oil
- 1 can black beans, rinsed & drained
- 1 med tomato, chopped
- 1/3 cup chopped red onion
- 1/4 cup lime juice
- 1 garlic clove, minced
- 2 tablespoons minced fresh cilantro
- Baked tortilla chips
directions
In a large bowl, combine corn, peas, cumin, oregano, and olive oil. In a small bowl, whisk the lime juice, & garlic. Stir in cilantro. Poor over corn mixture and stir to coat. Serve w/ tortilla chips. Refrigerate leftovers. Makes 4 cups.
