Mexican Pizzas
This recipe can take some time but Mexican pizzas are my favorite and wanted a way to do them at home on my own terms. By no means a healthy recipe but this way you control the quality and can change up the ingredients. If you want to make several and serve at same time, place in a warm oven (ex. 200 degrees) to keep hot.
ingredients
- Small Flour tortillas (2 per pizza)
- Oil
- Ground or pulled chicken, pork or beef (can leave out meat)
- Refried beans or bean dip
- Shredded Cheese (I prefer Mexican Cheese mix)
- Diced onions
- Diced green peppers
- Diced tomatoes (I prefer Roma because less juice and seeds. You do not need the extra water. Also can squeeze out juice and seeds and only cut up meat of tomato)
- Diced poblano (optional: mild smoky pepper)
- Salsa & Hot sauce to garnish

Chop all ingredients in prep

Heat thin layer of oil in frying pan. Set up pan and paper towels to drain tortillas.

Fry up flat tortilla shells. Happens very quickly, you cannot walk away. you may want to puncture bubbles as they occur so that pizzas stack neatly.

Once stack of fried tortillas is ready you can layer.

Lay down 1 tortilla, spread bean dip and add meat if desired

Add next tortilla and top with onion, peppers, and onions (poblanos if like it spicy).

Top with cheese.

Can place back in pan and heat through. I prefer to melt cheese and heat in oven.
