Deviled Crab

ingredients

  • 2 cans crab meat & flaked white fish - about 3 cups total
  • 4 Tbsp chopped onion
  • 2 Tbsp chopped green pepper
  • 3 Tbsp butter
  • 3 Tbsp flour
  • 1/2 tsp paprika
  • 1/8 tsp cayenne
  • 1 tsp dry mustard
  • dash salt
  • 1 cup milk
  • 1/2 tsp Worcestershire sauce
  • 1/2 cup heavy cream
  • 1/4 cup sherry
  • 2 Tbsp minced chives
  • 1/2 cup mushrooms, sliced (optional)
  • 2 frozen homemade hamburger buns - blender crumbled, reserve 1/3 cup crumbs
  • 1 Tbsp butter
  • 1/3 cup Parmesan cheese, grated

    Saute onion and pepper in butter. Blend in flour, paprika, cayenne, dry mustard, salt. Add milk, Worcestershire sauce and cook until slightly thickened. Add heavy cream, sherry, chives, mushrooms and all crumbs but reserved 1/3 cup. Add crab/fish and mix well.

    Evenly fill 6 scallop shell or bake-able serving dishes. Melt 1 Tbsp butter and mix with remaining bread crumbs and Parmesan cheese. Sprinkle thickly on shells, then garnish with paprika.

    Freeze. When frozen, wrap each in foil. To serve, remove foil and bake at 375° for 25 minutes.
