Crispy Latke
Homemade Potato Pancakes
ingredients
- 1 small onion, peeled
- 1 small sweet potato, peeled
- 2 large Idaho potatos, peeled
- 1 large egg, beaten
- 1/4 c. all-purpose flour (substitute rice flour for GLUTEN-FREE)
- 3/4 tsp. salt
- 1/2 tsp. pepper
- canola oil for frying

1. Using large holes on grater, shred onion, sweet potato, and baking potatoes into lg. bowl.

2. Stir egg, flour, salt, and pepper into mixture until well combined.

3. Heat a little less than 1/4" of canola oil in lg. frying pan over med-hi heat, when oil is hot spoon heaping tablespoons of potato mixture into oil and flatten slightly. Fry until golden brown on bottom, turn, and fry on other side (3 mins per side).

4. Drain on paper towels and repeat with remaining mixture.

5. Serve with applesauce and fat free sour cream.
