PUREED BEAN CROSTINI
ingredients
- 1 1/3 cup cooked white beans
- 3/4 cup extra virgin olive oil
- 2 cloves minced garlic
- 1 T minced sage
- 2/3 cup shredded parmesan
- salt and pepper
- one baguette

Put half a cup of olive oil in a saucepan; add the garlic and saute, until garlic is soft, but not brown. Add sage, saute for thirty seconds, then add beans. Stir again with a wooden spoon and remove from heat.

Puree the mixture in a food processor, adding olive oil as necessary to achieve a smooth, speadable texture.

Transfer to a bowl and stir in cheese. Add salt and pepper.

Cut bread into one quarter inch slices. Toast on both sides in a 400 oven.

Spread the puree on the toasted bread and garnish whith sage leaves.
