Vegetables Amandine
ingredients
- 1 lb. fresh broccoli and cauliflower florets
- 2 t. olive oil
- 3/8 t. salt
- 1/8 t. black pepper
- 1 T. slivered almonds

Preheat oven to 425°. Spray large rimmed baking sheet with PAM.

Combine all ingredients but almonds in a large bowl; toss to coat. Spread on the baking sheet. Roast 25 minutes, turning once halfway through baking.

Meanwhile, place almonds in a small non-stick skillet over medium heat. Cook until lightly toasted, about 5 minutes.

Transfer vegetables to a large bowl and sprinkle with almonds.
