No Bake Cheesecake

ingredients

  • 1 pkg. lemon gelatin
  • 1 c. boiling water
  • 1 (8 oz) cream cheeese
  • 1/2 c. sugar
  • 1 tsp. vanilla 1 large can evaporated milk
  • 3 c. graham cracker crumbs
  • 1/2 c. margarine, melted
  • 2 (9 in.) graham cracker pie crust, optional

    Dissolve gelatin in boiling water. Chill until slightly thickened. Cream together cheese, sugar, and vanilla. Add thinkened gelatin and blend well. Fold in sttiffly whipped milk (will whio better if the can of milk has been chilled for 2 hrs.). Pour into 2 9in pie crust of 9x13x2 pan, graham cracker crust. Chill several hours or overnight.

    Crust: Mix crumbs and margarine together, pat 2/3 of mixture on bottom and sides of 9x13x2 pan. Sprinkle reamining crumbs on top. Serrve plain or garnish with fruit.
