Spinach and Sun-Dried Tomato Pasta Sauce
Dana and Barb submitted this hearty sauce recipe as a family favorite. It is easy to make and visually appealing. Can be served over the pasta of your choice.
ingredients
- 1/4 cup sun-dried tomatoes
- 12 oz. pasta of your choice
- 1 small onion, chopped
- 4 to 5 cloves of garlic, minced
- 8-ounces fresh mushrooms, sliced
- 2 Tablespoons tamari soy sauce
- black pepper to taste
- 16 ounce can artichoke hearts, drained and chopped
- 1/4 cup kalamata olives
- 1/4 cup pine nuts
- 1 bunch fresh spinach, stems removed
- 3 oz. feta cheese crumbled

Soak sun-dried tomatoes in hot water 30 minutes; drain. Slice into thin strips. Cook pasta according to package directions.

Saute onions and garlic in oil over medium heat 2-3 minutes. Add mushrooms, tamari and black pepper; saute another 3 minutes until vegetables are tender. Add tomatoes, artichoke hearts, olives and pine nuts, toss. Add spinach, toss and heat through.

Toss with pasta; garnish with feta cheese.

What is tamari? Three main categories of soy sauce: Tamari, brewed made primarily with soybeans; Shoyu, brewed made from half soybean and half wheat; and nonbrewed, which is made from hydrolyzed vegetable protein.
