Hearty Clam Chowder
On Christmas Eve, my uncle Duane would make this soup along with oyster stew. Afterwards, we all would open up presents, each individually, until midnight mass. Then it was off to the choir loft!
ingredients
- 4 slices cut up bacon
- 3 green onions with tops, chopped
- 5 medium potatoes, cubed
- 2 tbsp. chopped green pepper
- 1 stalk celery, chopped
- 1 carrot, chopped
- 1 clove garlic, mashed
- 2 C. water
- 1 tsp. salt
- 1/s tsp. pepper
- 1 tsp. Worcestershire sauce
- 2 C. minced clams
- 1 pt. half and half
directions
Saute bacon until crisp. Add the next 6 ingredients. Add water and seasonings. Cover and simmer 15 minutes or until potatoes are tender. Mash mixture slightly. Heat clams in own juice for 3 minutes. Add clams and half and half to soup. Stir well. Heat until hot, but not boiling.
