Crab Imperial
ingredients
- 1 cup mayonnaise or salad dressing
- 1/4 c. finely chopped green pepper
- 1/4 cup finely chopped onion
- 1/2 tsp dry mustard
- 2 Tbsp lemon juice
- 1/2 tsp salt
- dash pepper
- 2 cups cooked fresh, thawed frozen, or drained, canned crab meat
- 2 hard-cooked eggs, chopped
- 4 medium size avocados
- 1 Tbsp lemon juice
- 1 cup soft bread crumbs
- 2 Tbsp melted butter or margarine
directions
Combine mayo or salad dressing, green pepper, onion, mustard, 2 Tbsp lemon juice, salt and pepper. Mix in crab meat and eggs. Cut avocados in half; remove seed. Cut a thin slice off bottom of each so avocado will stand. Brush cut surfaces with 1 Tbsp lemon juice. Mound crab meat mixture on avocado halves. Combine bread crumbs and melted butter, then sprinkle over crab meat. Bake in 350 degree oven for 10-15 minutes or until crumbs are lightly browned. Serve at once.
