Green Bean Cashew Casserole
This is my substitute for the “standard” green bean casserole dish at Thanksgiving.
ingredients
- 1 pound fresh green beans or 2 (9 ounce) packages frozen cut green beans
- 1 Tablespoon oil
- 1/2 cup thinly sliced onion
- 1/3 cup dry white wine or chicken broth
- 1/4 - 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1/2 cup cashew halves
- 1/2 cup light cream or milk
- 1/2 cup bread crumbs

Preheat oven to 350°F.

Cook beans in a small amount of water for 5 minutes. Drain.

In a large skillet, heat oil over medium heat. Cook onion for about 5 minutes; slowly add wine, salt, and pepper. Cook for 2 minutes until the liquid is nearly evaporated. Add 1/4 cup of the nuts and the cream. Brink to a boil, reduce heat and cook for 3 minutes. Add the beans, spoon mixture into a 1 1/2 quart oven safe dish. Top with bread crumbs and remaining cashews. Bake uncovered for 25-30 minutes or until the top is brown and heated throughout.
