Stuffed Zucchini Squash
ingredients
- 2 medium sized zucchini squash
- 3/4 cup rice
- 3/4 lb ground beef or pork sausage
- 1 medium onion, diced
- 2 Tbsp oil
- salt & pepper to taste
- grated cheese
directions
Cut squash in half, scoop out center pulp leaving 1/2 inch shell. Parboil shell for 5 min, drain on paper towel. Cook pulp in water until tender. Cook rice - saute ground beef and onion in oil until lightly brown. Thoroughly mix rice, squash pulp, beef mixture, salt & pepper. Stuff squash shells and bake in 350 degree oven for 30 minutes. Sprinkle with cheese just before removing from oven. Makes 4 servings.
