Lamb Curry
ingredients
- 2 lbs boneless lamb
- 2 cups plain yogurt
- 2 large potatoes
- 2 large onions
- garlic (as much as you like)
- 1/4 cup olive oil
- 1 tsp cumin seeds
- 1 tsp ground cardamon
- 1 tsp mustard seeds
- 1 tsp ground fenugreek
- 1/2 tsp turmeric
- 1 tsp ground ginger
- 1/2 tsp cinnamon
- red chili powder to taste
- 1/2 cup water
- 1 oz cashews
- salt to taste
- red and green peppers (if you like)
- 1 lemon
- basmati rice

Cut lamb into 1 1/2" cubes. Mix in with 2 cups plain yogurt and place in frdge for 24 hours.(covered).

Relax and have a Home Brew!

Next day in wok or dutch oven. Cut up potatoes into 1" cubes and boil for 5 minutes.

Fry up 2 large onions with as much garlic as you like in 1/4 cup olive oil. When onion just done add...cumin through water. Mix well adding lamb and yogurt mixture and potatoes, cook on stove top for 10 minutes. (you can add green and red pepers hear also). Transfer to large casserole dish and heat for 1 hour.

Serve with basmati rice and lemon wedges.
