Spinach Souffle

I like this for two reasons. I always have the ingredients on hand (frozen spinach keeps well in the freezer so I buy several at a time) and we’re eating spinach which is supposed to be good for you. I just ignore the cheese and milk and butter.

ingredients

  • 1 10-oz. pkg. frozen chopped spinach (thawed and drained)
  • 2 T. butter
  • 1 medium onion (3/4 cup)
  • 2 garlic cloves, minced
  • 3 large eggs
  • 2 T. flour
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. nutmeg
  • 1 c. milk
  • 1 c. grated parmesan cheese

    Press spinach between paper towels to remove all excess water. Melt butter in large skillet over medium heat. Add onion and garlic. Sauté five minutes or until garlic is lightly browned and onion is tender. Remove from heat. Stir in spinach until well blended. Cool.

    Whisk together eggs, flour, and seasonings in a large bowl. Whisk in milk and cheese. Stir in spinach mixture. Pour in lightly greased 8” square baking dish. Bake at 350˚ for 33-35 minutes or until set. Let stand for five minutes before serving.
