Bleu Cheese and Walnut Crackers
These are savory crackers (with the texture of a shortbread cookie) and because the cheese is already in them you don’t need to top them with anything. They are perfect pre-dinner appetizers with a glass of wine!
ingredients
- 1 stick unsalted butter at room temperature
- 4 oz. bleu cheese, room temperature
- 1 1/2 cups flour
- 1 tsp. kosher salt
- 1 tsp. ground black pepper
- 1 egg beaten with 1 Tbs. water
- 1/2 cup finely chopped walnuts

In the bowl of an electric mixer, cream the butter and bleu cheese together for 1 minute or until smooth. On low speed, add the flour, salt, and pepper and mix until large crumbles form (about 1 minute). Add 1 Tbs. water and mix until dough comes together.

Dump the dough onto a floured board, press it into a ball, and roll it into a 12-inch log. Brush the log with egg wash and roll the log back and forth over the walnuts until the log is completely covered. (You may need to press lightly on the walnuts to get them to stick.) Wrap the log in plastic wrap and refrigerate for at least an hour or for up to four days.

Preheat the oven to 350 degrees. Line a baking sheet with parchment paper. Cut the log into 1/4 slices and place the slices on the baking sheet. Bake for 20-22 minutes until lightly browned. Rotate the pan halfway through baking to insure even browning. Cool and serve at room temperature.

Other possible variations: parmesan & cracked black pepper; cheddar cheese & jalapeno; parmesan & crushed fresh rosemary
