Tuna Salad without Mayo

  • 2 6.5-oz cans of light Tuna, drained

  • Dressing:

  • 3 medium cloves garlic, pressed

  • 1 TBS prepared Dijon mustard

  • 1 tsp honey

  • 4 TBS fresh lemon juice

  • ¼ cup sunflower seeds

  • 4 oz silken tofu

  • ½ tsp Italian herbs

  • 2 Tbs EVOO

  • sea salt & pepper to taste

  • Combine all dressing ingredients in a blender and blend until smooth. Mix by hand with tuna in a mixing bowl. Serve on a bed of salad greens or use in a sandwich.
