1 Minute Quick Boiled Spinach
Spinach is the healthiest food that you can eat! Here is a very easy way to prepare and a few serving suggestions.
ingredients
- 1 lb fresh spinach (I like baby)
- Mediterranean Dressing
- 3 TBS extra virgin Olive oil
- 1 tsp lemon juice
- 1 medium clove garlic
- sea salt & pepper to taste

Use a large pot (3 quart) with lots of water. Bring to a rapid boil.

While water is coming to a boil, press or chop garlic and let sit for 5 minutes.

Wash spinach

When water is at a full boil, place spinach into pot. Do Not Cover.

Cooking spinach for 1 minute; begin timing as soon as you drop the spinach into the boiling water.

After the spinach has been cooking for 1 minute (do not wait for it to return to a boil), use a mesh strainer to remove the spinach from the pot. Press out the liquid with a fork.

Transfer to a bowl and toss with remaining ingredients while it is hot.
notes
You can also add a few drops of soy or drizzle with balsamic vinegar and grumbled goat cheese.
