Tex-Arizona Chili the Easy Way

ingredients
- 2 lbs. ground turkey
- 2 onions, diced
- 2 green peppers, diced
- 4 cans light red kidney beans
- 4 cans dark red kidney beans
- 2 cans corn
- 2 cans Ro-tel tomatoes
- Chili powder to taste (or use a dry chili mix)
- Garlic powder to taste
- Black pepper to taste
- Pinch of dill or cilantro, if desired
directions
Brown ground turkey in a skillet with some black pepper, salt, and garlic. When cooked through, drain and transfer to large pot. Dump all other ingredients in, unceremoniously, and stir. Cook on low for as many hours as you can, tasting often and adding seasoning as needed. The longer it simmers, the better it is, but don’t let it burn on the bottom, as this will flavor the whole pot of chili; however, some folks have favorably commented on the smoky flavor of chili this happened to, so you never know! Freezes well. Can be made in larger or smaller quantities, too.
