Gazpacho
ingredients
- 2 1/2 lbs Tomatoes (Peeled, Seeded, Chopped fine) or use San Marzano Canned Tomatoes
- 1/2 lb Seedless Cucumbers Cut into 1/2" Dice + extra for Garnish
- 1 Cup Red Onion, Chopped
- 1 Red Bell Pepper, Chopped
- 1 Yellow Bell Pepper, Chopped
- 3/4 Clove Garlic, Chopped Fine
- 1/4 Cup Olive Oil
- 1/4 Cup Red Wine Vinegar
- 1 Cup Tomato Juice
- 1 Cup Beef Broth
- 1 T Tomato Paste
- Cumin
- Salt
- Worcestershire Sauce
directions
Mix all together, let marinate at room temperature for an hour, refrigerate until serving. To Garnish, sprinkle with Parsley, Chopped Cucumber, Chopped Hard Boiled Egg or any combination of the above.
