Mom/Grandma Skone's Apricot/Nut Cookies
A favorite Christmas cookie of the family!
ingredients
- Dough
- 1lb oleo
- 5 tbsp baking powder
- 7 cups flour
- 4 egg yolks
- 1 whole egg
- 1 can of evaporated milk
- Apricot Filling
- 1 lb dried apricots
- 1/2 cup sugar
- Nut Filling
- 1 lb nuts, ground
- 1 cup sugar
- 1/8 lb of butter or oleo
- milk to moisten
- cinnamon to taste

For Apricot Filling

Place dried apricots and sugar in a pot. Add water until apricots are just covered. Simmer until soft. Place in food processor to puree.

For Nut Filling

Combine all ingredients in a pot over medium heat, stirring constantly.

For Dough

Mix together baking powder and flour. Cut oleo into flour mixture (like pie dough).

In a separate bowl, mix together egg yolks, whole egg, & evaporated milk.

Combine all ingredients and mix with hands until the mixture is not sticky (you may need to add more flour).

Divide into fourths. Place in fridge until chilled. Roll out dough with sugar. Cut into Squares. Fill with apricot or nut filling. Fold in corners. Bake on ungreased pan at 350 degrees for about 7 to 10 minutes or until golden brown.
