Roasted Garlic, Pumpkin and Red Pepper Risotto
ingredients
- 2 cups peeled and cubed pumpkin or winter squash cut into 1/2 inch cubes
- 1 red pepper, seeded and cut into quarters
- 6 teaspoons minced garlic
- 4 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon dried rosemary
- 1 onion, finely chopped
- 1 cup arborio rice
- 2 cups vegetable or chicken stock
- 1/2 cup white wine
- 1 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 10 Kalamata olives, pitted and quartered
- 2 cups roughly chopped fresh spinach
- 1 cup canned chick peas, rinsed well and drained
- 1/3 cup freshly grated Parmesan cheese
- 1 tablespoon fresh lemon juice
directions
Preheat oven to 450 degrees.
