Chocolate Truffle Varieties

ingredients

  • Milk Chocolate Truffles:
  • 1/3 cup + 2 tbsp. heavy whipping cream
  • 1/2 tbsp. unsalted butter
  • 2 cups Ghiradelli Milk Chocolate Chips
  • Coating: 1/3 cup Ghiradelli Unsweetened Cocoa or 3/4 cup chopped almonds
  • Ghiradelli Dark Chocolate Truffles:
  • 1/3 cup heavy whipping cream
  • 6 tbsp. unsalted butter, cut into small pieces
  • 2 cups Ghiradelli Double Chocolate Chips or 8 oz. Ghiradelli Bittersweet Chocolate Baking Bars)
  • Coating 1/3 cup Ghiradelli Unsweetened Cocoa, or 3/4 cup chopped almonds or pecans
  • Ghiradelli White Chocolate Truffles:
  • 1/3 cup _ ttbsp. Heavy whipping cream
  • 1 tbsp. unsalted butter
  • 8 oz. Ghiradelli White Chocolate Baking Bar, chopped into small pieces
  • Coating: 1 cup shredded coconut or chopped almonds.

    To prepare these truffle recipes:

    Bring the cream to a simmer in a small saucepan. Add butter and stir until melted. Add Ghiradelli chocolate to saucepan. Stir until completely melted and smooth. Remove from heat and pour the chocolate mixture into a shallow bowl. Cool, cover and refrigerate until firm, at least 2 hours. Roll mixture into 1-inch balls. Roll each ball in coating.

notes

It is very important to keep these truffles cold at all times. They melt rather readily. And in case you're wondering, yes, the recipes came from a Ghiradelli ad.
