Broiled Tilapia with Coconut-Curry Sauce
This meal comes together quickly and works well with shrimp, turkey or chicken too. I also like to add onion and spinach if I have it.
ingredients
- 1 tsp Dark Sesame Oil, divided
- 2 tsp Fresh Ginger, minced
- 2 Garlic cloves, minced
- 1 C Red Bell Pepper, finely chopped
- 1 C Green Onions, chopped
- 1 tsp Curry Powder
- 2 tsp Red Curry Paste
- 1/2 tsp Ground Cumin
- 4 tsp Low Sodium Soy Sauce
- 1 T Brown Sugar
- 1/2 tsp Salt, divided
- 1 (14oz) can Light Coconut Milk
- 2 T Fresh Cilantro, chopped
- 4 (6oz)Tilapia Fillets
- Cooking Spray
- 3 C Hot Cooked Basmati Rice
- 4 Lime Wedges
- 1 C Onion, chopped
- 1 C Frozen Spinach, thawed

1. Preheat broiler

2. Heat 1/2 tsp Oil in a large skillet over medium heat. Add Ginger and Garlic; cook 1 min. Add Pepper and Onions; cook 1 min.

3. Stir in Curry Powder, Curry Paste and Cumin; cook 1 min. Add Soy Sauce, Sugar, 1/4 tsp Salt, Coconut Milk (and Spinach if adding); bring to a simmer (Do Not Boil). Remove from heat, stir in Cilantro

4. Brush fish with 1/2 tsp oil, sprinkle with 1/4 tsp Salt. Place fish on baking sheet coated with cooking spray. Broile 7 min or until fish flakes easily when tested with a fork.

5. Serve fish with sauce, rice and lime wedges.
