ingredients

  • Salad:
  • Romaine lettuce
  • 1 c. chopped celery or jicama
  • 3-4 green onions, chopped
  • 2-3 avocados, sliced
  • 2-3 cans mandarin orange segments
  • 1/4 cup sliced or slivered almonds
  • Dressing:
  • 2 Tbsp. sugar
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. rice vinegar
  • 1/4 c. olive oil

    Combine all salad ingredients in large bowl, except for almonds. Make caramelized almonds as directed below. Mix salad dressing ingredients in a jar and shake thoroughly. Dressing can be doubled for larger salads.

    Caramelized Almonds: Place 2 Tbsp. sugar and 1/4 c. slivered or sliced almonds in skillet. Stir constantly over low heat until sugar melts and turns brown and collects on almonds. Remove from heat and break apart. Add to salad mixture.
