Baked red potatoes
These are an absolute staple for us with just about any protein and the most important thing is that you use a fresh parmesan cheese(our favorite is the block of Parmigiano Reggiano that you can get in the cheese section of Costco).
ingredients
- 8-10 red potatoes
- 1/4 cup extra virgin olive oil
- 1 teaspoon Thyme
- 1 teaspoon Rosemary
- 1/2 teaspoon oregano
- 1/2 teaspoon marjoram
- 1 teaspoon basil
- dash of paprika
- salt and pepper to taste
- 1/2 cup fresh Parmesan cheese
directions
Preheat the oven to 450. Wash potatoes and cut into bite-size pieces. Put potatoes into a gallon size Ziploc bag and then add all olive oil and all spices. Close up and coat potatoes in oil and spices. Spread potatoes in a single layer on a foil lined cookie sheet and sprinkle the parmesan on top of the potatoes just before putting into the oven. Cook or 35-45 minutes, depending on size of cut up potatoes(until crispy and golden).
