Wine Country Chicken Salad with Cranberries and Pecans
ingredients
- 4 C Cooked Chicken Breast, Chopped
- 1 C Celery, Chopped
- 3/4 C Dried Cranberries or Red Grapes halved
- 3/4 C Pecans or Walnuts
- 1 C Ligh Mayonnaise
- 2 T Apple Cider Vinegar
- 1 T Honey
- 4 tsp Sugar
- Sea Salt to taste
- Pepper to taste
- 1/2 tsp Poppy Seeds, optional
directions

1. In a large bowl combine Chicken, Celery, Cranberries (or Grapes) and Pecans (or Walnuts).

2. In a small bowl combine Mayonnaise, Vinegar, Honey, Sugar, Salt and Pepper to taste. Whisk until well blended and smooth. Stir in Poppy Seeds.

3. Pour over Chicken misture tossing well. Refrigerate 2 or 3 hours to let flavors marry.

Serve on a bed of greens, as a sandwich filling or on small toasts as an appetizer
