ingredients

  • 4 C Cooked Chicken Breast, Chopped
  • 1 C Celery, Chopped
  • 3/4 C Dried Cranberries or Red Grapes halved
  • 3/4 C Pecans or Walnuts
  • 1 C Ligh Mayonnaise
  • 2 T Apple Cider Vinegar
  • 1 T Honey
  • 4 tsp Sugar
  • Sea Salt to taste
  • Pepper to taste
  • 1/2 tsp Poppy Seeds, optional

directions

    1. In a large bowl combine Chicken, Celery, Cranberries (or Grapes) and Pecans (or Walnuts).

    2. In a small bowl combine Mayonnaise, Vinegar, Honey, Sugar, Salt and Pepper to taste. Whisk until well blended and smooth. Stir in Poppy Seeds.

    3. Pour over Chicken misture tossing well. Refrigerate 2 or 3 hours to let flavors marry.

Serve on a bed of greens, as a sandwich filling or on small toasts as an appetizer
