Corn and Black Bean Salad
ingredients
- 6 ears of sweet corn, cooked and taken off the cob or frozen kernels
- 2 c. black beans, rinsed and drained
- 1/4 c. red onion minced
- 1/4 c. minced green onion (including the green tops)
- 1/4 c. chopped fresh Italian flat leaf parsley
- 1 t. ground cumin
- 1/2 c. chopped tomatoes – take out most of the juice
- 1 juice of one lime or lemon
- 1/4 c. extra virgin olive oil
- Salt and pepper to taste

Mix altogether and let marinate at room temperature for at least an hour.

Serve with salmon or chicken
