Corn and Black Bean Salad

ingredients

  • 6 ears of sweet corn, cooked and taken off the cob or frozen kernels
  • 2 c. black beans, rinsed and drained
  • 1/4 c. red onion minced
  • 1/4 c. minced green onion (including the green tops)
  • 1/4 c. chopped fresh Italian flat leaf parsley
  • 1 t. ground cumin
  • 1/2 c. chopped tomatoes – take out most of the juice
  • 1 juice of one lime or lemon
  • 1/4 c. extra virgin olive oil
  • Salt and pepper to taste

    Mix altogether and let marinate at room temperature for at least an hour.

    Serve with salmon or chicken
