Corn & Black Bean Salsa

ingredients

  • 2 cups frozen corn
  • 1/2 cup black beans
  • 2 TBSP olive oil
  • 2 TBSP diced red pepper
  • 1 garlic clove
  • 1 small jalapeno pepper
  • 1 TBSP chopped cilantro
  • 1 TBSP lime juice
  • 1/2 TSP salt
  • 1/2 TSP ground cumin
  • 1/8 TSP black pepper
  • 1 TBSP fresh parsley

    Combine corn, black beans and remaining ingredients in medium size bowl, except for fresh parsley and cilantro.

    Cover and refrigerate.

    Bring to room temperature before serving and add freshly chopped parsley and cilantro.

  • 4

    Serve as a relish or with tortilla chips.
