Apricot or Date Nut Bread
ingredients
- 1 T. melted butter
- 1 1/2 c. sugar
- 1 egg
- 2 3/4 c. sifted flour
- 2 t. baking soda
- 1/2 t. salt
- 2 c. dried apricots or dates, chopped
- 1 c. chopped pecans
- 1 1/2 c. hot Dr. Pepper
- 1 T. vanilla
directions
Blend butter with sugar. Add egg and beat until light and fluffy. Sift flour, baking soda, salt and combine with chopped fruit mixture alternately with hot Dr. Pepper. Add vanilla. Pour into 2 (8“x4”x2") loaf pans or use miniature loaf pans – fill mini pans 1/2 full. Bake at 350° for 1 hour.
