Stir Fried Carrot & Cabbage Salad
ingredients
- 2 TB canola or olive oil
- 1 jalapeno, finely chopped
- 1 tsp. cumin seeds
- 1/2 tsp. ground pepper
- 1 tsp. ground coriander
- 5 carrots, peeled and grated
- 1 small head cabbage, cored and shredded
- 1/2 cup chopped fresh cilantro
- 1/2 tsp. cayenne
- 2 tsp. sugar
- Juice of 1-2 limes

Heat oil with jalapeƱo, cumin seeds, and ground pepper in large skillet over medium-high heat, cooking until the cumin is fragrant and browned about 2 minutes. Add the coriander, cook for a few seconds, and then add the carrots and cabbage. Cook, stirring occasionally, until the cabbage has wilted yet is still al dente, about 4 minutes.

Stir in cilantro, cayenne pepper, sugar, and salt. Cook for about a minute and then remove from heat, stir in lime juice and taste for seasonings.
