Spinach Gratin
A lot of work but worth it.
ingredients
- 1 stick unsalted butter
- 1 c chopped yellow onions
- 1/2 sm carton grated Velveeta cheese
- 1 8 oz pkg cream cheese, softened
- 1 lg jalapeno, seeded and chopped
- 1/4 c flour
- 1/4 t grated nutmeg
- 1 c heavy cream
- 1 c milk
- frozen chopped spinach, defrosted (2- 10 oz pkgs)
- ! T salt
- 1/2 t freshly ground black pepper
- 1/2 c grated Gruyere or Parmesan cheese

Melt butter in a heavy-bottomed sauté pan over medium heat. Add the onions and sauté until translucent, about 15 minutes. Add the flour and nutmeg and cook, stirring, for 2 more minutes. Add the cream and milk and cook until thickened. Squeeze as much liquid as possible from the spinach and transfer to a large casserole dish. Add chopped jalapeno, cream cheese, and Velveeta, pour the cream mixture over spinach. Add 1/2 c cheese and mix well. Season to taste with salt and pepper.

Bake for 20 minutes at 400° until hot and bubbly. Serve hot.
notes
You can substitute low-fat cream cheese, Smart Balance, and 2% milk but, anyway you slice it, this dish is loaded with calories. It's so good, though.
