My father LOVES all you can eat buffets, so we occasionally got to go out for a brunch buffet that involved an omelette guy. You know what I’m talking about... You pick out the ingredients you want, and the chef dazzles you by sauteeing, pouring eggs, and the grand finale... THE FLIP! OMFG he just FLIPPED the OMELETTE! It’s actually quite simple. Here’s how...

ingredients

  • 2 eggs
  • 1 tbsp milk
  • pinch of nutmeg
  • 2 tbsp butter/fake butter/vegetable/canola oil
  • chopped veggies or meats you like (for example, bell pepper, mushrooms, onions, spinach, bacon, ham)
  • 1/4 cup grated cheese
  • Recommended Equipment: 8 inch non-stick frying pan (I have a trusty Calphalon I got at the outlets for fifteen bucks); silicone or other hi-temp spatula

    Heat up the oil/butter over medium-high heat. Throw in your chopped goodies and fry up for a few minutes, stirring or shaking around occasionally. Meanwhile, in a small bowl, beat the eggs, milk, and nutmeg. Once your goodies have a nice sautee on them, cut the heat to medium low (and add some more oil/butter if the ingredients soaked up the original oil - this happens especially with mushrooms and spinach), and add the eggs.

    Here’s where the magic happens. After letting the eggs cook for about 30 seconds, take the spatula and lift up the edges of the omelette and let the liquid egg spill to the bottom of the pan. You can tip the pan to help out. Do this all the way around the pan a couple of times until most of the liquids appear cooked. Then, loosen the entire omelette so you can move it around in the pan with just your wrist.

    Once you can feel the omelette sliding around in the pan, you’re ready to flip. You really have to believe in yourself. Bottom line: if you don’t have confidence, you can’t flip. Ready... One... Two... Three... FLIP!

    OMFG you FLIPPED THE OMELETTE!!! (or you got scared and just turned it over with a pancake turner or something... LAME!)

    Once you flip the omelette, immediately scatter the grated cheese onto the top of the omelet, and then after about 30 seconds, slide the omelette to the plate and fold over so it melts the cheese inside.

    With a little practice, you can impress friends, small children, and get lots of chicks by flipping omelettes. One day you might be cool enough to be the omelette chef at the all you can eat brunch.
