Cheese Soup
ingredients
- 1 chopped onion
- 1 teaspoon olive oil
- 2 medium potatoes
- 1 carrot
- 1 zucchini
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon turmeric
- 1/2 teaspoon poultry seasoning
- 1 teaspoon garlic powder
- 2 cups vegetable stock or water
- 1 cup skim milk
- 1 cup grated cheddar cheese
directions
Chop the onions and saute in oil for about 5 minutes, until translucent. Meanwhile, chop the potatoes, carrots, and zucchini into approximately 1/2 inch chunks and stir those in with the onions. Add the stock (or water) and spices and simmer for 15-20 minutes. Stir in the milk and cheese, and cook just until melted and blended. If you like, you can also use a handblender to partially puree the soup which will thicken it somewhat.
