Nordstrom Tomato Basil Soup
The original recipe makes 4 1/2 gallons. This one has been adjusted to 24 servings. Keep in mind the times in the preparation instructions have not been adjusted for the smaller batch.
ingredients
- 2 1/4 cups canned peeled plum tomatoes
- 9 ounces carrots, chopped
- 9 ounces onions, chopped
- 2 1/4 teaspoons dry basil
- 3 tablespoons olive oil
- 6 cups water
- 3 ounces chicken base
- 2 1/4 cups heavy cream
- 2 1/4 teaspoons kosher salt
- 2 1/4 teaspoons black pepper

In a large stock pot, sautee the olive oil, carrots, and onions at medium heat for 15 minutes.

Add the basil, salt, pepper, and tomatoes and bring to a simmer for 45 minutes.

In a large bowl, whisk the chicken base into the water until dissolved.

Add the water mixture to the stock pot, bring to a boil, and then simmer.

Puree the soup using a hand blender while adding the heavy cream until it reaches a thin consistency.

It is best to use fresh basil. Conversions for fresh to dry is 1 tbsp fresh = 1 tsp dry. The plum tomatoes used at the stores are usually plum tomato strips by Stanislaus or Arrezzio. Try not to be cheap on the tomatoes or basil, it makes a difference.
