Stir Fried Beef w/Broccoli
ingredients
- 1 lb flank steak or round steak
- 2 Tbsp soy sauce
- 1 cup thinly sliced celery
- 1 Tbsp sherry or red wine
- 1 Tbsp salad oil
- 1 tsp sugar
- 1 pkg pea pods
- 1 garlic clove - minced
- 1 bunch green onions
- 1 Tbsp cornstarch
- 1/4 cup water
- Beef bouillon cube, mashed
- 1 Tbsp salt
- 1 bunch broccoli, cut into flowerets
directions
Cut steak into thirds lengthwise. Freeze about 30 minutes for easier slicing. Slice steak across grain into very thin diagonal pieces - set aside. In medium bowl combine soy sauce, sherry, sugar and garlic until smooth. Add beef and toss until well coated. Marinade 30 minutes or overnight. In small cup combine cornstarch, water and bouillon cube. In large saucepan bring 3 quarts water and 1 Tbsp salt to a boil. Blanch broccoli flowerets for one minute then add celery, pea pods, green onions and blanch for one more minute. Drain and set aside. In medium wok or skillet heat oil til hot, but not smoking. Add beef and cook stirring quickly and frequently (stir-fry) til beef loses its pink color - about 3 minutes. Stir in cornstarch mixture and cook one minute. Add blanched veggies and cook one more minute until heated through.
